MEDITERRANEAN SEA BASS DIET

Ingredients
°400g / 14 oz /2 cups potatoes, peeled and thickly sliced
°900g /2 Ib whole sea bass, gutted and scaled
° 1 onion, thinly sliced
° 190 g /6 half oz /1cup red pepper pesto
METHOD
1 prepare the oven to 220°c (200°c fan) / 425F gas 7. Boil the potatoes in salted water for about 10 mnts
2 spread out the potatoes on a baking tray and lay the sea bass on top.
3 mix the onion with the pesto and spoon it over the potatoes and fish.
4 transfer the baking tray to the oven and roast for 20 to 30 mnts or until the flesh of the bass comes away Easily from the bone.
If it starts to brown too quickly, cover the tray with foil.
5 garnish with parsley and serve immediately.
